Ingredients

  • 3/4 c. yellow cornmeal
  • 1 c. sweet milk
  • 1 c. hot water
  • 1 lb. ground beef
  • 1 green pepper, chopped fine
  • 1 onion, chopped fine
  • 3 Tbsp. bacon fat
  • 1 Tbsp. salt
  • 2 Tbsp. sugar
  • 2 tsp. chili powder
  • 1 can whole kernel corn
  • 1 can tomato juice (8 oz.)
  • 1 small bottle stuffed olives

Method

  • Pour milk over cornmeal. Saute onion, pepper and ground beef in bacon fat. When light brown, add tomato juice, salt, sugar, chili powder, corn and juice from the bottle of stuffed olives. Simmer a few minutes.
  • Add cornmeal mixture and whole olives.
  • Mix with the hot water and put in greased casserole. Bake in a 350° oven for 1 1/2 hours.
  • Remove cover and brown 15 minutes.
  • Serve hot.
  • Serves 6.
