Ingredients

  • 1 lb. ground turkey or beef, browned
  • 1 pkg. taco seasoning
  • 1 head lettuce, chopped (romaine or iceberg is best)
  • 1 to 2 c. shredded Cheddar cheese
  • 1 can kidney beans, drained and rinsed
  • 1 or 2 tomatoes, chopped
  • 1 bunch green onions, chopped (optional)
  • 1 or 2 avocados, cubed and sprinkled with lemon juice to prevent discoloration
  • 8 to 12 oz. sour cream (light or no-fat work just fine)
  • 8 to 12 oz. salsa (Pace medium is really good for this)

Method

  • Brown meat and add taco seasoning according to package instructions.
  • Mix sour cream and salsa in equal proportions in a container; keep chilled.
  • Prepare all other ingredients.
