Ingredients
- 1 lb. ground beef
- 1 medium onion
- 1 (16 oz.) can tomatoes, drained (save the juice)
- 1 c. rice (uncooked)
- 1 pkg. taco seasoning mix
- 1 c. shredded Cheddar cheese
- shredded lettuce
Method
- Brown ground beef and onion; drain grease.
- Add tomatoes, rice, taco seasoning and enough tomato juice or water to make 2 1/2 cups.
- Bring to boil and simmer until rice is done.
- Before serving, top with grated cheese and lettuce.
