Ingredients

  • 2 1/2 lb. fresh peas or 1 (20 oz.) bag frozen
  • 1/4 c. mayonnaise
  • 1 Tbsp. chopped parsley
  • 1 Tbsp. tarragon vinegar
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 bunch or 1 (6 oz.) bag radishes
  • lettuce leaves

Method

  • Shell peas if using fresh ones (there should be about 3 cups). In 3-quart saucepan over high heat, heat 3/4 cup water to boiling; add peas and heat to boiling. Reduce heat to low, cover and simmer 3 to 5 minutes, until peas are tender.
  • Drain peas. Rinse under running cold water to cool.
