Ingredients
- 4 None egg whites
- 1 pinch cream of tartar
- 3/4 cup sugar
- 3 cups mashed, hot sweet potatoes (about 2 pounds uncooked)
- 1 tbsp soft butter
- 2 tbsp crystallized ginger, finely chopped
- 1-2 tbsp orange juice
Method
- Preheat oven to 500°F.
- For the meringue, beat egg whites and cream of tartar at medium-high speed until soft peaks form. Combine sugar and a pinch of salt in a small bowl. Gradually add to egg whites, beating at high speed, until stiff peaks form.
- Combine sweet potatoes, butter, ginger and orange juice in a medium bowl. Transfer to a 2-quart baking dish and spread meringue over top. Bake for 3 mins, or until the meringue is golden. Serve immediately.
