Ingredients

  • 1 cup milk
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 3 Tbsp butter
  • 1 tsp nutmeg
  • 2 cups sweet potatoes, mashed
  • 2 eggs, separated
  • 1/2 cup raisins
  • 1/2 cup pecans, chopped
  • marshmallows

Method

  • Scald milk.
  • Add sugar, salt, butter, nutmeg and potatoes.
  • Beat with mixer until fluffy.
  • In small bowl, beat egg yolks until light and lemon colored.
  • Add to potato mixture.
  • Add raisins and pecans. In separate bowl, beat egg whites until stiff.
  • Fold into potatoes and pour into greased baking dish.
  • Bake at 350° 50 - 60 minutes, or until firm.
  • Top with marshmallows and brown.
