Ingredients

  • 2 c. mashed sweet potatoes
  • 1/2 c. oleo, softened
  • 2 eggs, separated
  • 1 c. firmly packed brown sugar
  • 4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1/2 c. milk
  • 1/4 c. sugar
  • 1 unbaked 9-inch pie shell

Method

  • Mix first 4 ingredients.
  • Next, add salt and spices and milk; mix well.
  • Beat egg whites at room temperature on high for 1 minute; gradually add sugar 1 tablespoon at a time.
  • Beat until stiff and forms a peak.
  • Fold in the egg whites into sweet potato mixture.
  • Spoon mixture into unbaked pie shell.
  • Bake at 400° for 10 minutes, then reduce to 350° and bake an additional 45 minutes or until set.
