Ingredients

  • 6 Cups cooked and mashed sweet potatoes
  • 3/4 Cup sugar
  • 3/4 Cup butter
  • 2 tsp vanilla
  • 1 Cup evaperated milk
  • 4 eggs, slightly beaten
  • Topping:
  • 3/4 Cup butter
  • 1 Cup flour
  • 1 Cup brown sugar
  • 1 1/2 Cups peacan halves

Method

  • Peel and slice sweet potatoes until you have about 8 cups of them. Boil until nice and soft, drain, and mash. At this point you can add the sugar, butter, vanilla, and milk. This cools the potato mixture enough to add the eggs without cooking them. Add in the slightly beaten eggs. Pour into a 9 x 13 pan and cover with the topping and then peacan halves. You can make a fancy pattern with the peacans.
  • Bake at 350 until center is cooked. 35 to 45 minutes. You may need to cover with foil after the first 20 minutes so the peacans don't burn.
