Ingredients
- 4 cucumbers, unpeeled
- 3 c. onions
- 1 1/2 c. red and green peppers
- 3 c. finely diced celery
- 1/4 c. salt
- 3 1/2 c. sugar
- 2 c. white vinegar
- 1 Tbsp. each: celery seed and mustard seed
Method
- Combine vegetables.
- Sprinkle with salt and cover with cold water.
- Let stand 4 hours.
- Drain and rinse.
- Press out all excess liquid.
- Combine sugar, vinegar and seeds.
- Bring to a boil until sugar is dissolved.
- Add vegetables; simmer 10 minutes.
- Fill jars and seal.
