Ingredients

  • 8 oz. tomatillos
  • 1/2 medium sized red onion
  • 1 large garlic clove
  • 3 jalapeno chili peppers, stemmed
  • 1/2 c. cilantro leaves
  • 1/4 tsp. fresh sage leaves or a small pinch of rubbed sage

Method

  • Peel the husks off the tomatillos.
  • Rinse tomatillos and place in a saucepan large enough to hold them in one layer.
  • Add water to cover.
  • Bring to boil and simmer until they are soft to the touch, about 5 minutes.
  • Drain and reserve the cooking liquid.
