Ingredients

  • 24 large green tomatoes
  • 12 medium onions
  • 3 sweet yellow peppers
  • 3 sweet red peppers
  • 1/2 c. salt
  • 5 c. sugar
  • 1 qt. cider vinegar
  • 1/4 c. mixed pickling spices

Method

  • Grind vegetables in meat grinder or food processor.
  • Mix with salt.
  • Put mixture in thin cloth bag; let drain overnight.
  • Next morning empty bag into large kettle, add sugar.
  • Stir mixture; add cider vinegar and pickling spices and let mixture boil for 20 minutes.
  • Remove spice bag.
  • Fill canning jars which have been in a kettle of boiling water; seal filled jars.
  • Cover with lids which have been in boiling water.
