Ingredients
- 1/2 cup dry white wine
- 2 Tbsp shallot minced
- 6 whole peppercorns
- 1 sprig + 1 Tbsp chopped tarragon
- juice of half lemon
- 12Tbsp Butter
- 3 egg yolk (beaten w/ 2Tbsp water
- 1/4 tsp Worcestershire
- salt & Tabasco to taste
Method
- Bring wine, shallots, peppercorns, sprig Tarragon, and lemon juice to a boil. Simmer to 2 Tbsp (5min) and reduce heat to med. Gradually add butter whisking until melted. Strain back into saucepan and slowly add yolks/water mixture. Cook 3 min and season with salt & Tabasco, and chopped tarragon.
