Ingredients

  • 1/2 cup dry white wine
  • 2 Tbsp shallot minced
  • 6 whole peppercorns
  • 1 sprig + 1 Tbsp chopped tarragon
  • juice of half lemon
  • 12Tbsp Butter
  • 3 egg yolk (beaten w/ 2Tbsp water
  • 1/4 tsp Worcestershire
  • salt & Tabasco to taste

Method

  • Bring wine, shallots, peppercorns, sprig Tarragon, and lemon juice to a boil. Simmer to 2 Tbsp (5min) and reduce heat to med. Gradually add butter whisking until melted. Strain back into saucepan and slowly add yolks/water mixture. Cook 3 min and season with salt & Tabasco, and chopped tarragon.
