Ingredients

  • 1/4 Cup Brown Sugar
  • 2 Tbsps. Cornstarch
  • 1/4 Cup Cider Vinegar
  • 2 Tbsps. Soy Sauce
  • 1 8 Oz.Can Drained Pineapple chunks
  • 1 Pound 1/2 inch cubes of Boneless Pork
  • 1 5 oz.Can drained and sliced Water Chestnuts
  • 1 Cut in 1/4" strips Green Pepper, Medium
  • 1/2 Chopped Onion

Method

  • Combine sugar and cornstarch in a 1-1/2 to 2 quart casserole. Stir in vinegar, soy sauce and pineapple juice (reserved from can) Add pork, cover, Microwave at HIGH 2 minutes. Reduce power to medium and microwave 10 to 15 minutes, or until pork is no longer pink in center, stirring once or twice.
  • Add water chestnuts, green pepper and onion. Cover and microwave 4 to 6 minutes, until pepper is tender-crisp, stirring once during the cooking. Mix in pineapple chunks; serve over rice or fried noodles.
