Ingredients

  • 1 lb. lean, cubed pork
  • 1 c. chicken broth
  • 2 medium green peppers (1-inch strips)
  • 3 Tbsp. chopped onion
  • 1 c. pineapple chunks
  • 3 Tbsp. cornstarch
  • 4 c. cooked rice
  • 3 Tbsp. cornstarch
  • 1/4 c. sugar
  • 1/4 c. vinegar
  • 2 tsp. soy sauce
  • 1/2 c. pineapple syrup

Method

  • Brown pork well in a little hot oil.
  • Season well with salt and pepper.
  • Add broth; simmer covered on low 20 minutes.
  • Add peppers, onion and pineapple.
  • Cook another 10 minutes.
  • Blend cornstarch with sugar, vinegar, soy sauce and syrup.
  • Add to mixture.
  • Stir constantly until thickened, then 5 minutes more. Serve over hot rice.
