Ingredients
- 2 lb. boiled squash
- 1 grated onion
- 1 grated carrot
- 1 stick margarine, melted
- salt and pepper (optional)
- 1 c. sour cream
- 2 tsp. pimento
- 1 can cream of chicken soup
- 1 bag Pepperidge Farm stuffing mix (save 1/3 for top)
Method
- Mix all ingredients.
- Pour into buttered (greased) casserole dish.
- Top with remaining stuffing.
- Bake at 350° for 25 minutes, or until top is brown.
