- 1 cup butter or 1 cup margarine
- 12 cup honey
- 12 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla, gluten free
- 1 12 teaspoons baking powder
- 14 teaspoon baking soda
- 14 teaspoon salt
- 1 tablespoon cinnamon
- 2 cups Bob's Red Mill gluten-free all-purpose baking flour
- 2 cups zucchini, grated and unpeeled
- 1 cup sweetened flaked coconut
- 1 cup walnuts, chopped
- 1 cup chocolate chips (semi sweet)
Method
- Preheat oven to 350 degrees.
- Cream butter with brown sugar and honey.
- Add the eggs and then the vanilla.
- Mix well.
- Combine all the dry ingredients together in a bowl, stir into batter.
- Stir in the zucchini, coconut, walnuts and chocolate chips.
- Grease a 12 x 9 pan, pour in batter and bake 35 0 45 minutes.
- Cool and enjoy!
