Ingredients

  • 1 cup butter or 1 cup margarine
  • 12 cup honey
  • 12 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla, gluten free
  • 1 12 teaspoons baking powder
  • 14 teaspoon baking soda
  • 14 teaspoon salt
  • 1 tablespoon cinnamon
  • 2 cups Bob's Red Mill gluten-free all-purpose baking flour
  • 2 cups zucchini, grated and unpeeled
  • 1 cup sweetened flaked coconut
  • 1 cup walnuts, chopped
  • 1 cup chocolate chips (semi sweet)

Method

  • Preheat oven to 350 degrees.
  • Cream butter with brown sugar and honey.
  • Add the eggs and then the vanilla.
  • Mix well.
  • Combine all the dry ingredients together in a bowl, stir into batter.
  • Stir in the zucchini, coconut, walnuts and chocolate chips.
  • Grease a 12 x 9 pan, pour in batter and bake 35 0 45 minutes.
  • Cool and enjoy!
