Ingredients

  • 1 c. chopped onion
  • 3 cloves garlic, finely chopped
  • 2 c. sliced zucchini
  • 1 1/2 lb. fresh or frozen shrimp, peeled and deveined
  • grated Parmesan cheese
  • 2 Tbsp. olive oil
  • 2 (26 oz.) jars pasta sauce
  • 1 lb. spaghetti, cooked

Method

  • In large pot, cook onions and garlic in oil until tender.
  • Add pasta sauce and zucchini.
  • Bring to a boil and reduce heat. Simmer, uncovered, 10 minutes.
  • Add shrimp; cover and simmer 8 minutes or until tender.
  • Serve over hot spaghetti and sprinkle with cheese.
