Ingredients
- 1 c. chopped onion
- 3 cloves garlic, finely chopped
- 2 c. sliced zucchini
- 1 1/2 lb. fresh or frozen shrimp, peeled and deveined
- grated Parmesan cheese
- 2 Tbsp. olive oil
- 2 (26 oz.) jars pasta sauce
- 1 lb. spaghetti, cooked
Method
- In large pot, cook onions and garlic in oil until tender.
- Add pasta sauce and zucchini.
- Bring to a boil and reduce heat. Simmer, uncovered, 10 minutes.
- Add shrimp; cover and simmer 8 minutes or until tender.
- Serve over hot spaghetti and sprinkle with cheese.
