Ingredients

  • 1/4 Kabocha squash
  • 2 tbsp Raisins
  • 1 Cucumber
  • 1 dash Salt (for salting)
  • 4 tbsp Heavy cream
  • 1/2 tsp Salt and pepper

Method

  • Peel the kabocha squash and dice.
  • Microwave or boil them until soft.
  • Slice the cucumbers and sprinkle with salt.
  • Place them in a colander.
  • When the cucumber slices are becoming soft, squeeze out the excess water.
  • When soft, drain the kabocha and put in a bowl and lightly smash it.
  • Add the cucumber slices and raisins to the kabocha.
  • Add the heavy cream, salt and pepper and combine.
  • Taste and adjust the seasoning.
