Ingredients
- 1/4 Kabocha squash
- 2 tbsp Raisins
- 1 Cucumber
- 1 dash Salt (for salting)
- 4 tbsp Heavy cream
- 1/2 tsp Salt and pepper
Method
- Peel the kabocha squash and dice.
- Microwave or boil them until soft.
- Slice the cucumbers and sprinkle with salt.
- Place them in a colander.
- When the cucumber slices are becoming soft, squeeze out the excess water.
- When soft, drain the kabocha and put in a bowl and lightly smash it.
- Add the cucumber slices and raisins to the kabocha.
- Add the heavy cream, salt and pepper and combine.
- Taste and adjust the seasoning.
