- 2 cups brown rice, uncooked
- 400 g canned beans, drained (four-bean mix)
- 1 cup green beans, cooked
- 1 Spanish onion, sliced
- 1/2 bunch parsley, chopped
- 250 g cherry tomatoes, halved
- 4 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon coarse grain mustard
- salt and pepper
Method
- Cook Brown Medium Grain Rice as per pack instructions. Allow to cool.
- 2 Place all ingredients in to a large bowl and mix together gently.
- 3 Season to taste with salt and pepper.
- 4 Tip: This salad is great served at a BBQ or as a healthy lunch. Variation: Sprinkle with some crumbled fetta cheese.
