Ingredients

  • 2 cups brown rice, uncooked
  • 400 g canned beans, drained (four-bean mix)
  • 1 cup green beans, cooked
  • 1 Spanish onion, sliced
  • 1/2 bunch parsley, chopped
  • 250 g cherry tomatoes, halved
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 teaspoon coarse grain mustard
  • salt and pepper

Method

  • Cook Brown Medium Grain Rice as per pack instructions. Allow to cool.
  • 2 Place all ingredients in to a large bowl and mix together gently.
  • 3 Season to taste with salt and pepper.
  • 4 Tip: This salad is great served at a BBQ or as a healthy lunch. Variation: Sprinkle with some crumbled fetta cheese.
