Ingredients

  • 1 c confectioners sugar
  • 1 c butter
  • 1 c sugar
  • 1 c oil
  • 2 eggs
  • 4 c + 4 T flour
  • 1 t cream of tartar
  • 1 t baking soda
  • 1 t salt
  • 1 t vanilla

Method

  • Cream together the first 4 ingredients, add eggs and vanilla. Add all dry ingredients.
  • Refrigerate at least 1 hr.
  • To bake, pinch off about 1 t of dough, roll into a ball and place on a greased cookie sheet.
  • Press each cookie into a circle with the bottom of a glass or cookie press dipped into sugar.
  • Bake at 375 F for 10-12 minutes.
  • Do not let them get too brown.
  • Cool completely.
  • Keep in airtight container.
  • These will keep for up to four weeks and they get better with age.
