Ingredients

  • 6 slices day old white bread (remove crust)
  • 2 Tbsp. reduced-calorie margarine
  • 1/2 c. granulated sugar replacement, divided
  • 1 tsp. cinnamon
  • 1/2 c. raisins
  • vegetable cooking spray
  • 4 eggs, beaten
  • 2 c. skim milk
  • 1 tsp. vanilla

Method

  • Brush bread with melted margarine.
  • Mix 1 teaspoon sugar substitute and cinnamon.
  • Sprinkle over bread.
  • Quarter each bread slice.
  • Layer with raisins in 1 1/2-quart casserole coated with cooking spray.
  • Set dish aside.
  • Combine eggs, milk, vanilla and remaining sugar replacement.
  • Pour over bread and raisins.
  • Place dish in a pan containing hot water.
  • Bake at 350° for 55 to 60 minutes or until a knife inserted in center comes out clean.
