Ingredients
- 4 large green peppers
- 1 lb. lean ground beef
- 1 (8 oz.) can tomato sauce
- 1 tsp. salt
- dash of pepper
- 1 small onion
- 2 c. cooked rice
- 2 Tbsp. chopped celery
Method
- Cut a thin slice off the stem end of the peppers.
- Remove and discard the seeds.
- In a 1 1/2-quart nonmetal casserole, combine onion and ground beef.
- Place in microwave oven and cook on High for 2 to 3 minutes or until the onion becomes transparent and beef is slightly browned.
- Add rice, tomato sauce, celery salt and pepper; mix well.
- Stuff peppers with mixture and place on baking sheet.
- Cover with plastic wrap and microwave on Medium-high for 12 to 15 minutes.
- Serves 4.
