Ingredients
- 1 lb. ground beef
- 3/4 c. Minute rice
- sprinkle of salt
- 1/4 tsp. pepper
- 1 onion, chopped (2 Tbsp.)
- 1 can tomato soup
- 4 to 6 large green peppers
Method
- Remove stems and seeds from peppers.
- Cook in boiling water for 5 minutes.
- Drain.
- Mix beef, rice, salt, pepper and onion. Add 2/3 can tomato soup.
- Stuff peppers with meat mixture.
- Stand upright in small baking dish.
- Pour remaining soup, diluted with 1/3 soup can of water, over peppers.
- Bake, covered, for 45 minutes, uncovered, for 15 minutes longer at 350°.
