Ingredients

  • 1 lb. ground beef
  • 3/4 c. Minute rice
  • sprinkle of salt
  • 1/4 tsp. pepper
  • 1 onion, chopped (2 Tbsp.)
  • 1 can tomato soup
  • 4 to 6 large green peppers

Method

  • Remove stems and seeds from peppers.
  • Cook in boiling water for 5 minutes.
  • Drain.
  • Mix beef, rice, salt, pepper and onion. Add 2/3 can tomato soup.
  • Stuff peppers with meat mixture.
  • Stand upright in small baking dish.
  • Pour remaining soup, diluted with 1/3 soup can of water, over peppers.
  • Bake, covered, for 45 minutes, uncovered, for 15 minutes longer at 350°.
