Ingredients

  • 1/4 c. shortening
  • 2/3 c. sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. milk
  • whipped cream
  • 3 pt. fresh strawberries, sliced

Method

  • In a mixing bowl, cream shortening and sugar. Add egg and vanilla; beat well. Combine dry ingredients; add to the creamed mixture alternately with milk. Spread in a greased 9-inch square baking pan. Bake at 350° for 20 to 25 minutes. Cool on a wire rack. Cut into squares; split each piece in half horizontally. Spoon whipped cream and strawberries onto bottoms; replace tops. Garnish with more berries and whipped cream. Serve immediately. Yield: 9 servings.
