- 1 c. margarine
- 1 1/2 c. sugar
- 1 tsp. vanilla
- 1/4 tsp. lemon extract
- 4 eggs
- 3 c. flour
- 1 tsp. salt
- 1 tsp. cream of tartar
- 1/2 tsp. baking soda
- 1 c. strawberry preserves
- 1/2 c. sour cream
- 1 c. chopped walnuts or pecans
Method
- Cream margarine, sugar, vanilla and lemon extract until fluffy.
- Add eggs, one at a time, beating well after each addition.
- Sift together flour, salt, cream of tartar and baking soda.
- Combine preserves and sour cream.
- Add this to dry ingredients alternately with creamed mixture, beating well after each addition.
- Stir in nuts.
- Pour into greased and floured loaf pans (5 small or 2 large pans).
- Bake at 350° for 50 to 55 minutes.
- Remove from pans; cool on wire racks.
