Ingredients

  • 1 c. margarine
  • 1 1/2 c. sugar
  • 1 tsp. vanilla
  • 1/4 tsp. lemon extract
  • 4 eggs
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. cream of tartar
  • 1/2 tsp. baking soda
  • 1 c. strawberry preserves
  • 1/2 c. sour cream
  • 1 c. chopped walnuts or pecans

Method

  • Cream margarine, sugar, vanilla and lemon extract until fluffy.
  • Add eggs, one at a time, beating well after each addition.
  • Sift together flour, salt, cream of tartar and baking soda.
  • Combine preserves and sour cream.
  • Add this to dry ingredients alternately with creamed mixture, beating well after each addition.
  • Stir in nuts.
  • Pour into greased and floured loaf pans (5 small or 2 large pans).
  • Bake at 350° for 50 to 55 minutes.
  • Remove from pans; cool on wire racks.
