Ingredients
- 3 c. all-purpose flour
- 3 tsp. cinnamon
- 1 tsp. salt
- 4 eggs, beaten
- 2 c. chopped pecans
- 2 (10 oz.) pkg. frozen strawberries, thawed (not drained)
- 2 c. sugar
- 1 tsp. baking soda
- 1 1/4 c. oil
- 1 (20 oz.) can crushed pineapple, drained
- 2 c. raisins (optional)
Method
- Combine flour, sugar, cinnamon, baking soda and salt in a large bowl.
- Add oil and eggs; mix well.
- Stir in strawberries, pineapple, raisins and pecans.
- Pour batter into 2 greased and floured loaf pans.
- Bake 1 hour and 15 minutes at 350°.
- Remove from pans; cool.
- Wrap loaves in foil tightly overnight to mellow.
