Ingredients

  • 3 c. all-purpose flour
  • 3 tsp. cinnamon
  • 1 tsp. salt
  • 4 eggs, beaten
  • 2 c. chopped pecans
  • 2 (10 oz.) pkg. frozen strawberries, thawed (not drained)
  • 2 c. sugar
  • 1 tsp. baking soda
  • 1 1/4 c. oil
  • 1 (20 oz.) can crushed pineapple, drained
  • 2 c. raisins (optional)

Method

  • Combine flour, sugar, cinnamon, baking soda and salt in a large bowl.
  • Add oil and eggs; mix well.
  • Stir in strawberries, pineapple, raisins and pecans.
  • Pour batter into 2 greased and floured loaf pans.
  • Bake 1 hour and 15 minutes at 350°.
  • Remove from pans; cool.
  • Wrap loaves in foil tightly overnight to mellow.
