Ingredients

  • 8 ounces dried chopped dates
  • 1 13 cups water, hot
  • 1 13 teaspoons baking soda
  • 13 cup unsalted butter
  • 1 cup superfine sugar
  • 3 medium eggs
  • 1 34 cups flour
  • 14 teaspoon baking powder
  • 14 teaspoon salt
  • 14 teaspoon vanilla
  • 4 cups packed brown sugar
  • 2 cups butter
  • 2 teaspoons vanilla
  • 1 cup heavy cream

Method

  • Cake directions:.
  • Preheat oven to 350 degrees, and prepare a 9x13 inch pan.
  • Combine the dates and hot water in a medium saucepan, bring to boil and remove.
  • Add the baking soda and set aside to cool.
  • Cream butter and sugar completely (for about 3 min.
  • ), and add one egg at a time, beating after each addition.
  • Sift together flour, baking powder and salt, and add to the mixture.
  • Add the dates and liquid (slowly so that you do not scramble the eggs), and add the vanilla.
  • Stir just enough to incorporate all ingredients and pour into the prepared pan.
  • Bake for 25-30 minutes or until a cake tester comes out clean.

  • Heat sugar, butter and vanilla over low heat for 20 minutes, stirring occasionally until all brown sugar has dissolved.
  • If desired, stir in cream.
  • Keep warm until serving.
  • Spoon carmael sauce over each slice of cake and if desired, add a dollop of whipped cream.
