- 8 ounces dried chopped dates
- 1 13 cups water, hot
- 1 13 teaspoons baking soda
- 13 cup unsalted butter
- 1 cup superfine sugar
- 3 medium eggs
- 1 34 cups flour
- 14 teaspoon baking powder
- 14 teaspoon salt
- 14 teaspoon vanilla
- 4 cups packed brown sugar
- 2 cups butter
- 2 teaspoons vanilla
- 1 cup heavy cream
Method
- Cake directions:.
- Preheat oven to 350 degrees, and prepare a 9x13 inch pan.
- Combine the dates and hot water in a medium saucepan, bring to boil and remove.
- Add the baking soda and set aside to cool.
- Cream butter and sugar completely (for about 3 min.
- ), and add one egg at a time, beating after each addition.
- Sift together flour, baking powder and salt, and add to the mixture.
- Add the dates and liquid (slowly so that you do not scramble the eggs), and add the vanilla.
- Stir just enough to incorporate all ingredients and pour into the prepared pan.
- Bake for 25-30 minutes or until a cake tester comes out clean.

- Heat sugar, butter and vanilla over low heat for 20 minutes, stirring occasionally until all brown sugar has dissolved.
- If desired, stir in cream.
- Keep warm until serving.
- Spoon carmael sauce over each slice of cake and if desired, add a dollop of whipped cream.
