Ingredients

  • 1 20oz fresh 3 cheese tortellini
  • 1/2 c of mayonnaise
  • 1/2 c olive oil
  • 1/4 c red wine vinegar
  • 1 1/2 tsp dijon mustard
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp dried basil
  • 1 garlic clove
  • 2 c chopped parsley
  • 1 13 oz artichoke hars in water, drained and chopped
  • 3/4 c chopped green onions
  • 1/2 c drained oil packed sun dried tomatoes, chopped
  • 1/2 c kalamata, olives coarsely chopped
  • 1/2 c grated parmesan cheese

Method

  • cook pasta with salt, drain and rise with cold water
  • whisky mayo and next ingredients
  • transfer dressing to a bowl, 3/4 of a cup and mix in celery, artichokes, green onions, tomatoes and olives
  • add pasta then cheese, toss. season with salt and pepper.
  • serve cold or room temp.
  • may be a day ahead
