- 1 20oz fresh 3 cheese tortellini
- 1/2 c of mayonnaise
- 1/2 c olive oil
- 1/4 c red wine vinegar
- 1 1/2 tsp dijon mustard
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp dried basil
- 1 garlic clove
- 2 c chopped parsley
- 1 13 oz artichoke hars in water, drained and chopped
- 3/4 c chopped green onions
- 1/2 c drained oil packed sun dried tomatoes, chopped
- 1/2 c kalamata, olives coarsely chopped
- 1/2 c grated parmesan cheese
Method
- cook pasta with salt, drain and rise with cold water
- whisky mayo and next ingredients
- transfer dressing to a bowl, 3/4 of a cup and mix in celery, artichokes, green onions, tomatoes and olives
- add pasta then cheese, toss. season with salt and pepper.
- serve cold or room temp.
