Ingredients
- 2 lb. yellow crookneck squash, cooked until tender
- 1/2 bell pepper, seeded and chopped
- 1 small onion, chopped
- 2 Tbsp. oleo
- 1 roll garlic cheese, chipped
- 1/2 c. mayonnaise
- 1/2 c. diced green chilies
- 1 tsp. salt
- 2 eggs, beaten
Method
- Saute pepper and onion in oleo.
- Drain the squash and while still hot, add ingredients.
- Bake at 325° for 30 minutes or until bubbly.
