Ingredients
- 5 medium squash (yellow, green or mixed)
- 1/2 c. thinly sliced onion
- 1/2 c. chopped celery
- 1/2 c. green pepper, chopped
- 1 clove garlic, crushed or garlic powder
- 2 Tbsp. wine vinegar
- 3/4 c. sugar or less
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/3 c. salad oil
- 2/3 c. cider vinegar
Method
- Combine squash which has been thinly sliced, onion, celery and pepper; toss lightly.
- Combine all other ingredients; stir well. Spoon over vegetables.
- Chill 12 hours, stirring occasionally.
