Ingredients
- 4 c. diced squash (zucchini or yellow)
- 3/4 c. chopped bell pepper
- 1 c. chopped onion
- 2 beaten eggs
- 3/4 stick oleo
- 3/4 c. mushroom soup
- 1 c. crushed crackers (save half)
Method
- Boil squash until tender.
- In skillet, melt butter and add bell pepper and onion.
- Drain squash.
- Mix with skillet mixture.
- Add eggs, soup and 1/2 crackers.
- Put into ungreased casserole dish. Put remaining crackers on top.
- Can add cheese before cooking. Cook at 350° for 15 minutes.
