Ingredients

  • 4 c. diced squash (zucchini or yellow)
  • 3/4 c. chopped bell pepper
  • 1 c. chopped onion
  • 2 beaten eggs
  • 3/4 stick oleo
  • 3/4 c. mushroom soup
  • 1 c. crushed crackers (save half)

Method

  • Boil squash until tender.
  • In skillet, melt butter and add bell pepper and onion.
  • Drain squash.
  • Mix with skillet mixture.
  • Add eggs, soup and 1/2 crackers.
  • Put into ungreased casserole dish. Put remaining crackers on top.
  • Can add cheese before cooking. Cook at 350° for 15 minutes.
