Ingredients

  • 2 lb. squash (yellow or zucchini)
  • 1 carrot, finely grated
  • 1 onion, finely chopped
  • 1 can cream of chicken soup
  • 1/2 pt. sour cream
  • 1 1/3 sticks margarine
  • 1 pkg. Pepperidge Farm dressing mix (herb flavored)
  • salt and pepper

Method

  • Cook chopped squash in salted water until tender.
  • Drain well. Season with salt, pepper and 1/3 stick oleo.
  • Add the grated carrot, onion, soup and sour cream.
  • Melt 1 stick margarine in microwave.
  • Add to dressing and toss.
