Ingredients
- 2 lb. squash (yellow or zucchini)
- 1 carrot, finely grated
- 1 onion, finely chopped
- 1 can cream of chicken soup
- 1/2 pt. sour cream
- 1 1/3 sticks margarine
- 1 pkg. Pepperidge Farm dressing mix (herb flavored)
- salt and pepper
Method
- Cook chopped squash in salted water until tender.
- Drain well. Season with salt, pepper and 1/3 stick oleo.
- Add the grated carrot, onion, soup and sour cream.
- Melt 1 stick margarine in microwave.
- Add to dressing and toss.
