Ingredients

  • 1 lb. ground beef
  • 1 green pepper, diced
  • 1 onion, diced
  • 1 tomato, diced
  • 1 lb. grated cheese
  • 1 can cream of mushroom soup
  • salt
  • pepper
  • 4 medium squash, sliced

Method

  • Cook ground beef in a large skillet; drain off excess fat. In bowl, combine ground beef, green pepper, onion, tomato, salt and pepper; mix well.
  • Place this in the bottom of a casserole dish.
  • Add squash and 1/2 of cheese.
  • Pour cream of mushroom soup over squash.
  • Sprinkle with remaining cheese.
  • Bake until squash is done.
