Ingredients

  • 2 Tbsp. fat
  • 1 clove garlic
  • 1 c. finely diced onion
  • 1/2 lb. ground beef
  • 1/2 c. uncooked rice
  • 5 to 6 c. water
  • 1 c. finely diced carrots
  • 1 c. finely diced potatoes
  • 1 to 2 tsp. soy or Worcestershire sauce
  • 1 Tbsp. salt
  • 1/8 tsp. pepper

Method

  • Brown garlic in fat in 10-inch skillet.
  • Remove garlic, then add onion and beef.
  • Cook until browned.
  • Add rice and water. Simmer, uncovered, over low heat 40 minutes.
  • Add carrots and potatoes.
  • Continue simmering until tender (20 minutes).
  • Add seasonings.
  • Serve hot, garnished with parsley.
  • Makes 6 servings.
