Ingredients
- 1 1/2 lb. potatoes
- salt
- basil leaves
- 1 medium onion, sliced thin
- 1 (10 oz.) pkg. frozen asparagus, cooked
- 3 medium tomatoes, sliced
- 1 Tbsp. bread crumbs
Method
- Peel potatoes and slice 1/8-inch thick.
- Place half the potato slices in greased 9-inch square baking dish.
- Sprinkle with salt and basil.
- Top with layers of sliced onion, asparagus and tomato slices, sprinkling each layer with salt and basil.
- Top with remaining potato slices; sprinkle with bread crumbs.
- Cover with foil.
- Bake at 375° for 40 minutes.
- Remove cover and continue to bake 10 to 15 minutes longer or until potatoes are tender.
- Makes 6 servings.
