Ingredients

  • 1 1/2 lb. potatoes
  • salt
  • basil leaves
  • 1 medium onion, sliced thin
  • 1 (10 oz.) pkg. frozen asparagus, cooked
  • 3 medium tomatoes, sliced
  • 1 Tbsp. bread crumbs

Method

  • Peel potatoes and slice 1/8-inch thick.
  • Place half the potato slices in greased 9-inch square baking dish.
  • Sprinkle with salt and basil.
  • Top with layers of sliced onion, asparagus and tomato slices, sprinkling each layer with salt and basil.
  • Top with remaining potato slices; sprinkle with bread crumbs.
  • Cover with foil.
  • Bake at 375° for 40 minutes.
  • Remove cover and continue to bake 10 to 15 minutes longer or until potatoes are tender.
  • Makes 6 servings.
