Ingredients

  • 1 lb. spring macaroni
  • 1/2 c. chopped onion
  • 1 c. diced celery
  • 1 medium green pepper, diced
  • 1 c. sugar
  • 1 c. hot water
  • 1/2 c. vinegar
  • 2 c. mayo
  • 1 1/2 tsp. turmeric powder

Method

  • Cook spring macaroni according to package directions.
  • Rinse and cool.
  • Place in large mixing bowl.
  • Add diced onion, celery and green pepper to cooled macaroni.
  • In a saucepan, combine sugar, hot water and vinegar.
  • Stir until the sugar dissolves. Place mayo and turmeric in a medium sized mixing bowl.
  • Stir until smooth.
  • Add the sugar, hot water and vinegar mixture to the mayo mixture.
  • Mix well.
  • Pour over the macaroni mixture in the large mixing bowl.
  • Stir well.
  • Refrigerate 24 hours.
  • Stir once or twice before serving.
