Ingredients

  • 2 tsp. honey
  • 1 tsp. finely minced fresh ginger
  • 1 lime, finely grated and juiced
  • 4 tbsp. extra-virgin olive oil,

  • Seasonings, to taste
  • 8-1/2 oz. mixed baby lettuces
  • 1 bunch chives, roughly snipped
  • 1/2 cup mint leaves
  • 1/2 cup flat parsley leaves
  • 1 cup edible flowers

Method

  • Mix together the honey, ginger, lime zest and juice.
  • Whisk into the olive oil.
  • Season to taste.
  • Set aside.
  • Select the prettiest of the lettuce leaves and place in a large mixing bowl with the fresh herbs.
  • Just before serving, re-whisk the dressing and pour over the leaves.
  • Mix gently before adding the flowers.
  • Serve on individual plates, arranged in airy layers.
