Ingredients
- 2 c. corn meal
- 2 1/2 c. boiling water
- 1 1/2 tsp. salt
- 1 Tbsp. sugar
- 2 tsp. baking powder
- 2 egg yolks
- 1 3/4 c. milk
- 3 Tbsp. melted shortening
- 2 egg whites
Method
- Add boiling water slowly to corn meal, stirring constantly. Let stand until cool.
- Mix salt, sugar and baking powder with beaten egg yolks.
- Add milk.
- Add milk mixture to cooled corn meal.
- Beat vigorously.
- Add melted shortening.
- Fold in beaten egg whites.
- Bake in well-greased deep baking dish or pan at 400° for about 40 minutes.
- Serve by spoonfuls from baking dish.
- Eat warm with butter.
