Ingredients

  • 2 c. corn meal
  • 2 1/2 c. boiling water
  • 1 1/2 tsp. salt
  • 1 Tbsp. sugar
  • 2 tsp. baking powder
  • 2 egg yolks
  • 1 3/4 c. milk
  • 3 Tbsp. melted shortening
  • 2 egg whites

Method

  • Add boiling water slowly to corn meal, stirring constantly. Let stand until cool.
  • Mix salt, sugar and baking powder with beaten egg yolks.
  • Add milk.
  • Add milk mixture to cooled corn meal.
  • Beat vigorously.
  • Add melted shortening.
  • Fold in beaten egg whites.
  • Bake in well-greased deep baking dish or pan at 400° for about 40 minutes.
  • Serve by spoonfuls from baking dish.
  • Eat warm with butter.
