Ingredients

  • 2/3 c. sugar
  • 2 tsp. vanilla
  • 2 c. all-purpose flour (unsifted)
  • 1/2 tsp. baking powder
  • preserves (apricot, prune, nut, etc.)
  • 3/4 c. margarine or butter, softened
  • 1 egg

Method

  • In a large bowl, beat sugar and margarine until light and fluffy.
  • Add vanilla and egg; beat well.
  • Next, stir in flour and baking powder.
  • Blend well.
  • On lightly floured surface, divide dough into 4 equal parts.
  • Shape each into a roll, 12 x 3/4-inches.
  • Place on ungreased cookie sheet.
  • Using handle of wooden spoon or finger, make a depression lengthwise down center of each roll, about 1/2-inch wide and 1/4-inch deep.
  • Fill each depression with preserves.
  • Bake at 350° for 15 to 20 minutes or until light golden brown.
  • Cool slightly and cut diagonally into bars.
