Ingredients
- 2/3 c. sugar
- 2 tsp. vanilla
- 2 c. all-purpose flour (unsifted)
- 1/2 tsp. baking powder
- preserves (apricot, prune, nut, etc.)
- 3/4 c. margarine or butter, softened
- 1 egg
Method
- In a large bowl, beat sugar and margarine until light and fluffy.
- Add vanilla and egg; beat well.
- Next, stir in flour and baking powder.
- Blend well.
- On lightly floured surface, divide dough into 4 equal parts.
- Shape each into a roll, 12 x 3/4-inches.
- Place on ungreased cookie sheet.
- Using handle of wooden spoon or finger, make a depression lengthwise down center of each roll, about 1/2-inch wide and 1/4-inch deep.
- Fill each depression with preserves.
- Bake at 350° for 15 to 20 minutes or until light golden brown.
- Cool slightly and cut diagonally into bars.
