Ingredients
- 2 (10 oz.) pkg. frozen chopped spinach
- 4 eggs, beaten
- 1 c. milk
- 1 c. Ricotta cheese
- 1 c. bread crumbs (seasoned)
- 1 (14.5 oz.) can diced seasoned tomatoes
- 1/2 c. Parmesan cheese
Method
- Thaw spinach in microwave and squeeze out all water.
- Beat eggs with milk, Ricotta cheese and bread crumbs.
- Add spinach and mix well.
- Use 13 x 9-inch casserole dish; spray with Pam and cover bottom of dish with tomatoes.
- Spread spinach mixture over tomatoes.
- Sprinkle Parmesan cheese over top.
- Bake a 375° for 30 minutes.
