Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 4 eggs, beaten
  • 1 c. milk
  • 1 c. Ricotta cheese
  • 1 c. bread crumbs (seasoned)
  • 1 (14.5 oz.) can diced seasoned tomatoes
  • 1/2 c. Parmesan cheese

Method

  • Thaw spinach in microwave and squeeze out all water.
  • Beat eggs with milk, Ricotta cheese and bread crumbs.
  • Add spinach and mix well.
  • Use 13 x 9-inch casserole dish; spray with Pam and cover bottom of dish with tomatoes.
  • Spread spinach mixture over tomatoes.
  • Sprinkle Parmesan cheese over top.
  • Bake a 375° for 30 minutes.
