- 1/2 red bell pepper, cut into thin strips (about 2/3 c.)
- 1/2 yellow bell pepper, cut into thin strips (about 2/3 c.)
- 1/4 c. currants or raisins
- 1/4 c. sliced green onions
- 2 Tbsp. shelled sunflower seeds
- 1/2 c. prepared light olive oil vinaigrette dressing
- 2 c. cooked brown or white rice, cooled
- 1 c. chopped fresh spinach or Green Giant frozen cut leaf spinach (from 16 oz. pkg.), thawed and well drained
Method
- In medium bowl, combine all ingredients; toss lightly.
- Cover and refrigerate until serving time.
- Makes 8 (1/2 cup) servings.
