Ingredients

  • 12 oz Fresh Baby Spinach
  • 1/4 cup Butter
  • 3 tbsp AP Flour
  • 1/4 tsp Salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic salt
  • 4 each Eggs - slightly beaten or Egg Substitute
  • 3/4 cup Whipping Cream or 1/4 cup lite mayo & 1/2 cup yogurt
  • 1/2 cup Parmesan Cheese

Method

  • Rinse spinach well and drain. Saute over medium heat with 1/4 cup butter until just wilted.
  • Combine flour, salt, pepper and garlic powder in large bowl. Add spinach, cream, eggs and Parmesan cheese, stirring well.
  • Pour into greased 9-inch pie pan.
  • Bake at 350 for25 minutes or until pie is set. Let stand for 10 minutes.
