Ingredients
- 12 oz Fresh Baby Spinach
- 1/4 cup Butter
- 3 tbsp AP Flour
- 1/4 tsp Salt
- 1/4 tsp pepper
- 1/4 tsp garlic salt
- 4 each Eggs - slightly beaten or Egg Substitute
- 3/4 cup Whipping Cream or 1/4 cup lite mayo & 1/2 cup yogurt
- 1/2 cup Parmesan Cheese
Method
- Rinse spinach well and drain. Saute over medium heat with 1/4 cup butter until just wilted.
- Combine flour, salt, pepper and garlic powder in large bowl. Add spinach, cream, eggs and Parmesan cheese, stirring well.
- Pour into greased 9-inch pie pan.
- Bake at 350 for25 minutes or until pie is set. Let stand for 10 minutes.
