Ingredients
- 2 Tablespoons Unsalted Butter
- 2 cloves Garlic, Large, Peeled And Minced
- 1/4 cups All-purpose Flour
- 2 cups Milk
- 4 whole Potatoes, Peeled And Quartered
- 1 whole Egg
- 1 package (about 10 Oz. Size) Frozen Spinach, Completely Thawed And Wrung Dry
- Salt And Pepper, to taste
- 1/2 cups Shredded Cheddar Cheese
Method
- Preheat oven to 400°F.
- Melt butter in a large pan and add garlic. Saute for 1 minute on medium heat, then whisk in flour until it's absorbed all the fat. Whisk in milk and continue stirring for a few minutes until mixture thickens. Set aside to cool while you cook potatoes.
- Add peeled and quartered potatoes to a large pot of boiling salted water. Cook for approximately 15 minutes or until potatoes are fork tender. Mash with a couple of tablespoons of the thickened sauce.
- Whisk egg into the slightly cooled sauce and stir in spinach. Fold spinach mixture into mashed potatoes and season to taste. Spoon into a buttered baking dish (approximately 10") and top with cheddar cheese. Bake for 20-30 minutes until cheese has melted and is light golden brown.
