Ingredients

  • 2 Tablespoons Unsalted Butter
  • 2 cloves Garlic, Large, Peeled And Minced
  • 1/4 cups All-purpose Flour
  • 2 cups Milk
  • 4 whole Potatoes, Peeled And Quartered
  • 1 whole Egg
  • 1 package (about 10 Oz. Size) Frozen Spinach, Completely Thawed And Wrung Dry
  • Salt And Pepper, to taste
  • 1/2 cups Shredded Cheddar Cheese

Method

  • Preheat oven to 400°F.
  • Melt butter in a large pan and add garlic. Saute for 1 minute on medium heat, then whisk in flour until it's absorbed all the fat. Whisk in milk and continue stirring for a few minutes until mixture thickens. Set aside to cool while you cook potatoes.
  • Add peeled and quartered potatoes to a large pot of boiling salted water. Cook for approximately 15 minutes or until potatoes are fork tender. Mash with a couple of tablespoons of the thickened sauce.
  • Whisk egg into the slightly cooled sauce and stir in spinach. Fold spinach mixture into mashed potatoes and season to taste. Spoon into a buttered baking dish (approximately 10") and top with cheddar cheese. Bake for 20-30 minutes until cheese has melted and is light golden brown.
