Ingredients
- 3 eggs
- 2 Tbsp. flour
- 10 oz. chopped spinach
- 2 Tbsp. butter
- 4 oz. cottage cheese
- 6 oz. grated Cheddar cheese
Method
- Preheat oven to 350°.
- Beat eggs and flour until smooth.
- Cook and drain spinach.
- Add all ingredients to egg mixture and stir. Melt butter in 10-inch square pan.
- Pour mixture in pan and bake 30 minutes.
- Let set for 10 minutes after baking.
- Serves 6.
- May be made a day ahead.
- May substitute broccoli.
