- 2 pkg. chopped frozen spinach
- 4 eggs, hard-boiled and chopped
- 1 onion, chopped
- 1 clove garlic, minced
- 2 Tbsp. butter
- 1/2 tsp. salt
- 1/2 tsp. seasoned salt
- 1/4 tsp. black pepper
- 1 can cream of mushroom soup
- 1 c. bread crumbs
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. red pepper
- 1 can sliced mushrooms
Method
- Thaw and drain spinach; set aside.
- Saute onion and garlic in butter.
- Add mushroom soup, salt, pepper, mushrooms, spinach and eggs.
- Place in buttered casserole dish.
- Top with bread crumbs and Parmesan cheese.
- Bake 20 to 30 minutes or until bubbly at 350°.
