Ingredients

  • 2 pkg. chopped frozen spinach
  • 4 eggs, hard-boiled and chopped
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 2 Tbsp. butter
  • 1/2 tsp. salt
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. black pepper
  • 1 can cream of mushroom soup
  • 1 c. bread crumbs
  • 1/2 c. grated Parmesan cheese
  • 1/4 tsp. red pepper
  • 1 can sliced mushrooms

Method

  • Thaw and drain spinach; set aside.
  • Saute onion and garlic in butter.
  • Add mushroom soup, salt, pepper, mushrooms, spinach and eggs.
  • Place in buttered casserole dish.
  • Top with bread crumbs and Parmesan cheese.
  • Bake 20 to 30 minutes or until bubbly at 350°.
