Ingredients

  • 1/2 cup grated Romano cheese
  • 1 - 2 cloves garlic
  • 10 oz. pkg. frozen spinach
  • 6 oz. jar artichoke hearts
  • 8-oz tub garlic-chive cream cheese
  • 2 large eggs
  • 1 cup shredded mozzarella

Method

  • Preheat oven to 375 degrees.
  • Thaw and then squeeze spinach to remove moisture.
  • Rinse, drain and pat dry the artichoke hearts.
  • Put Romano cheese in food processor with metal blade. Turn motor on and drop garlic through food tube to mince.
  • Stop motor and add spinach, artichokes, cream cheese and eggs.
  • Process until blended.
  • Put mixture in medium bowl and gently stir in mozzarella cheese.
  • Transfer to ovenproof baking dish and bake 20 - 25 minutes.
