Ingredients

  • 2 tablespoons vegetable oil
  • 1 12 lbs ground turkey
  • 2 medium onions, chopped
  • 1 medium green bell pepper, chopped
  • 3 tablespoons chili powder
  • 2 teaspoons dried oregano
  • 1 (16 ounce) package frozen corn
  • 2 (15 ounce) cans Mexican-style stewed tomatoes
  • 2 (16 ounce) cans kidney beans, drained and rinsed
  • 1 (14 ounce) can chicken broth
  • salt and pepper

Method

  • In a large casserole, heat oil.
  • Add turkey, onions and green pepper and cook over medium high heat, stirring often, until meat is no longer pink, about 4 minutes.
  • Add chili powder and oregano and cook for 1 minute.
  • Add corn, tomatoes, beans, chicken broth, 1 1/2 cups water and salt and pepper.
  • Bring to a boil over high heat, reduce heat to medium, and cook, uncovered, stirring occasionally until chili thickens slightly, 8-10 minutes.
