Ingredients

  • 10 ounces, weight Chopped Frozen Spinach
  • 13 cups Half-and-half
  • 1 cup Cream Cheese
  • 2 cups Chopped Tomato (about 2 Medium-sized Tomatoes)
  • 3/4 cups Chopped Onion
  • 2 cups Monterey Jack Cheese
  • 1 teaspoon Jalapeno Pepper or Pepper Flakes
  • 1/4 cups Parmesan Cheese
  • 1 clove Chopped Garlic, Or More

Method

  • Cook spinach on stovetop according to package directions.
  • Squeeze out as much water as you possibly can (I tend to use a strainer first and then a tea towel).
  • Mix spinach and other ingredients in a bowl and transfer to an oven-safe dish and cover with foil.
  • Bake at 350 degrees for 20 minutes, then remove foil and cook for about another 15 minutes until warm/hot.
