Ingredients

  • 1 pound boneless chicken thigh
  • 1/3 cup buttermilk
  • 1 large egg
  • 1 1/2 cups panko
  • 1/2 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon cayenne
  • salt
  • 1 1/2 teaspoons italian seasoning

Method

  • Whisk together the egg and buttermilk.
  • Cut the chicken into tiny pieces and leave it soaking in the wet mix.
  • Combine dry ingredients for breading
  • Take the chicken, try to shake off a most of the moisture and take it to the crumb mixture. Make sure it's not too wet otherwise the panko doesn't stick to the chicken too well.
  • Pan or deep fry until golden brown
