Ingredients

  • 2 slices turkey ham or ham, cut into cubes (approximately 4 oz.)
  • 1/2 c. onion, chopped
  • 1/2 c. bell pepper, chopped
  • 2 cloves garlic, chopped
  • 2 bay leaves
  • 2 tsp. thyme
  • 1 tsp. parsley flakes
  • 2 fresh cayenne peppers, chopped, or 1/4 tsp. pepper flakes (optional, but recommended)
  • 1/4 tsp. black pepper
  • 1 (15 oz.) can chicken broth
  • 1 (15 oz.) can tomato sauce
  • 1/2 can water
  • 1 c. rice
  • 1/2 tsp. oil

Method

  • In nonstick 12-inch skillet, heat oil on medium; saute onion and bell pepper for 1 minute.
  • Add chicken broth, tomato sauce, water, ham, garlic, parsley, thyme and cayenne.
  • Stir.
  • Bring to a boil.
  • Add rice.
  • Stir.
  • Add bay leaves on top.
  • Reduce heat to a simmer, cover and cook for 20 minutes.
  • Uncover; let sit 5 minutes.
  • Fluff with a fork and serve.
  • Makes 2 large servings (352 calories and 4 1/2 grams fat per serving).
